Daily we are asked "why is your coffee so much better than anyone else's?" There is a reason. We do it the old-fashioned way: by hand - no computerized roasting, no automated packing machines. We buy only the finest arabica beans and small-batch roast them (min. 20lbs. - max. 40lbs.). Each varietal and blend is roasted differently, not "program" roasted. Some of our blends took two months to formulate and are re-evaluated with each new crop. Where other companies keep a reserve stock of coffee to ship when ordered, our freshness standard requires that we roast and ship the same day. These same standards extend to our retail stores as well.
Having a degree in chemistry has been very handy in formulating tea blends for a specific event or occasion. When I blend, there is always a goal - a briskness for a morning pick me up, a scented tea for afternoon, teas to accompany certain foods or desserts or simply to provide a moment of tranquility. Each season, hundreds of samples from China , Japan , India and Ceylon arrive requiring rigorous "cupping". From these, we select according to our rigid standards of excellence. Similar to the blending process we use for coffee, we reformulate our tea blends to take full advantage of their unique seasonal qualities.
